Udon Soup with Seaweed

I had some vaguely hopeful news this morning and decided to celebrate with a quick udon noodle soup.  I had some frozen noodles blocks in the freezer, scallions, seaweed salad and an udon noodle Hon Tsuyu soup base.  Perfect.

Udon Soup with Seaweed

1/4 cup Hon Tsuyu noodle soup base

1 1/4 cup water

2 scallions, sliced

1 serving block of frozen udon noodles

1/3 cup Japanese seaweed salad

1 hard-boiled egg, halved

Chilli garlic sauce (optional)

Bring the soup base, water and scallions to a boil.  Add the noodles, bring back to a boil and simmer for 3 minutes.

Place the noodles in a serving bowl, top with the seaweed and hard boiled egg.  Pour the soup over the top.  Serve with chilli sauce if desired.

    You must have a gigantic freezer! You always seem to pull goodies out of there.
    I never freeze anything, my freezer is tiny and I go to the market a few times a week. Different ways of cooking.

  2. I like cooking both ways. Wandering around the market while composing a meal is creative. But I also like having things on hand in case I have an idea that I’d like to implement immediately, like today 😉

    That looks delicious. I make big use of the freezer too, especially when I find bargains at the butcher, though it’s normally freezing fresh things or my home made meals. That kind of thing is great for busy days.

    this is a brilliant use of seaweed salad (which I love, and which is available freshly made at my grocery store). it’s getting cooler and I’m not always in the mood for cold seaweed salad these days, but I would definitely love some seaweed soup! making a list for my next shopping trip so I can make this. I might add some mushrooms, as well. thank you!

    p.s. freezers are wonderful things.
