Jade and I each had one of these salads for brunch, might as well say breakfast 🙂 I was thinking about some Jamie salmon scrambled eggs https://cookinginsens.wordpress.com/2011/11/18/scrambled-eggs-and-smoked-salmon-a-la-jamie/ but was mind snatched by a perfectly ripe avocado.
Smoked Salmon Salad for Two
1 generous slice of smoked salmon, cut into squares
1 generous chunk of smoked salmon, cubed
Mixed salad greens
2 red spring onions, sliced
4 cherry tomatoes, halved
1 avocado, sliced and tossed with the juice of 1/2 lime
Toss the two salmons with a little mustard vinaigrette and set aside. Arrange the salad greens on two plates, sprinkle over the onion slices, mound the salmon on top, surround with the tomatoes and avocado slices. Sprinkle the chives over the salmon.
