Roasted Pepper and Feta Omelette

Bitterly cold outside today.   The dog got a short but brisk walk this morning and so did I, which put me in the mood to eat something large.

Roasted Pepper and Feta Cheese Omelette

2 eggs, beaten

1 tbsp butter

1/4 yellow roasted pepper

1/4 red roasted pepper

Feta cheese, crumbled

Salt and pepper

Cook the eggs in the butter until almost set.  Season with a little salt and pepper.  Add the peppers and cheese on one side, fold and eat.
