Coquelet Nature

I needed to do a few things today in preparation for my luncheon tomorrow and got really stuck for time.  With an hour to get dinner on the table, I butterflied a little chicken (coquelet), salt and peppered it, brushed with butter and cooked it for 45 minutes in a 400 degree oven.  My daughter Jade called it Coquelet nature and pronounced it perfect.   Sometimes the simple things are best.
