Tarte aux Mirabelles with Almonds

Mirabelles are small French plums with a tart sweet taste.   They are a beautiful little fruit, even when abused by the rains like the ones below.

Wanting to do something with this fruit, I searched my French cookbooks and came up with a recipe for a tarte with mirabelle, caramel and almonds.

Jade ate two pieces, one with ice cream.

Tarte Mirabelle with Almonds

1 pre-rolled pate brisee or a recipe for a flaky crust

300 grams mirabelle, cut in half

80 grams butter

80 grams sugar

60 grams almonds, sliced

Place the crust in a pie pan, prick with a fork and bake for 5 minutes in a preheated 400 degree oven.  Remove and place the mirabelle inside.

Cook the butter and sugar until it caramelizes.  Pour over the top of the mirabelle and scatter the almonds on top.   Bake for 20-25 minutes in the 400 degree oven.

    Ooh, what a pretty presentation! I’m not familiar with mirabelles, they looks so grape like. I make a similar pie with Italian plums but wish I could find these to try!
