Of Cherry Mousse and Pie

I grew up eating Bing cherries in California.  Because they are grown there, my father could buy a case of picked, juicy cherries straight from the orchard for about two dollars.  Talk about orgies, we would eat and eat and eat until our hands and mouths were cherry red.  I can’t remember my mom making anything with them but in our family fresh California fruit was an end in itself.

I honestly can’t say whether the cherries here in France are Bing, but they taste like it; juicy, sweet and nostalgic.

To make the cherry mousse, follow the recipe for the strawberry mousse here  https://cookinginsens.wordpress.com/2011/05/25/strawberry-mousse/  then to continue with a cherry mousse pie, just make a chocolate wafer pie shell and fill with the mousse, topping with the cherry syrup.
