Mediterranean Lamb Chops

I went to the discount bin again at Carrefour and found 2 packages of lamb chops for the price of one!   I’m always so pleased 🙂

Browning the seasoned chops in butter

Mediterranean Lamb Chops

8 lamb chops

1 1/2  tbsp butter

Salt and pepper

Garlic powder

Oregano

Sprinkle the lamb chops with salt, pepper, garlic powder and oregano.   Brown for a few minutes in butter.   Set aside.

1 large onion, chopped

2 large cloves of garlic, chopped

3 large tomatoes, coarsely chopped.

1 1/2 tbsp of olive oil

Oregano

Salt and pepper

Saute the onion and garlic in olive oil until soft.   Add the tomatoes and cook for about 2 minutes.   Place this mixture in the bottom of a baking pan and sprinkle with oregano, salt and pepper.  Place the lamb chops on top and cook in a 425 oven for 15 -20 minutes.

Serve with your choice of pasta (spaghetti, tagliatelle), salad and a nice Italian red like Chianti or Amarone.
