Chili Cheese Omelette

IMG_4807bI often think about Sens; walking the dog in the morning, going to the market, stopping for coffee or une verre with friends, those impromptu breakfasts, cobbled together with leftovers as the sun came up.  I often regret my “déplacement”.

Mme Gilberte Parret has left us.  She leaves behind those who knew and loved her deeply.  A diploma-ed cheesemaker, an accomplished cook, a wonderful wife, mother and friend.  We will be going to Sens on Friday to attend the funeral mass and to join her family in celebrating her life.  Qu’elle repose en paix.

Chili Cheese Omelette

Left over chili beans

1 tbsp butter

2 eggs, beaten

Grated cheese

Scallion, sliced

Warm the chili and set aside, keeping warm.  Cook the eggs in the butter until edges start to set, then lift edges to let the uncooked egg run under the bottom.  Repeat until the egg is set.  Add a little chili beans to one side of the omelette and sprinkle with some cheese.  Fold, top with a little more chili beans, grated cheese and scallions.

    I’m very sorry to hear about Mme Gilberte Parret – that’s very sad, though I’m sure you will all be remembering good times spent with her.

    • Thanks Mad. We were surprised. She did have a rough winter but the last time we saw her, she seemed to have bounced back, laughing, talking and eating with her usual gusto. I’m happy that we got to lunch together one last time :)
