Bavarian Roasted Chicken with Chard


All Recipes interested me with a caraway, fennel and herb rubbed roasted chicken that they said came from the Bavarian region of Germany.  Okay.  I didn’t have any caraway seed but used internet recommended dill instead and I forgot to add the flour.  But this was the best roasted chicken I have had in years!  Years, I tell you!  Crusty with flavorful herbs and spices on the outside,  juicy and moist inside.  The mixture of herbs and spices is a keeper and I will be trying it on other meats and seafood.  Thank you All Recipes people!


When I brushed on the herb/spice paste and took a look at the chicken’s new look and smelled the aroma of the mixture, I was sold before it went to the oven.  Everybody should make this chicken!


I stir fried some chard with a little spinach to accompany the chicken but when I make this again, I will serve with potato and fresh green salad.   Still, chard goes with everything :)


Bavarian Roasted Chicken

1 roasting chicken, halved

1 tsp salt

1/2 tsp dill seeds

1/2 tsp sage leaves

1/2 tsp fennel seeds

1/2 tsp coriander seeds

1/2 tsp dried rosemary leaves

2 tbsp dark paprika

2 tsp garlic powder

1 tsp onion powder

5 tbsp olive oil

Grind all the seasonings together in a blender, add to the oil and brush on every part of the chicken halves.  Let the chicken rest for about 30 minutes, then roast skin side up in a 425 F oven for 15 minutes.   Baste with the oil from the bottom of the pan, lower the temperature to 375 F and continue to roast for 45 minutes.

    For those in Michigan, no need to make the drive all the way over to the Bavarian Inn (Frankenmuth, MI). Here’s a great Bavarian chicken recipe with a great mixture of herbs and spices. This might be more of a weekend dish as total cooking time is around an hour.
