Cheddar Cheese Eggs – Place some butter sauteed spinach in the bottom of a ramekin, then cover with 1/2 cup tomato sauce. Break two eggs into the sauce, poke the yolks once with a toothpick, then sprinkle on some grated cheddar cheese. Bake in a 400 F oven for 12-15 minutes.
Duck Legs with Girolle Mushrooms - Separate 2 duck legs into drumsticks and thighs, then salt and pepper. Brown the duck in 2 tbsp duck fat, remove from the pan and add 1 sliced onion and 2 diced carrots, then cook for 5 minutes. Put the duck back in the pan, pour in 1/2 bottle of red wine and simmer for 3 minutes. Add 1 cup of chicken broth, bring to a boil and simmer for 45 minutes.
Saute 1/2 lb girolle mushrooms in 2 tbsp butter for 3-4 minutes. Set aside.
Remove the duck pieces from the pan, add 2 tbsp creme fraiche and simmer for about 5 minutes. Put the duck and the mushrooms back in the pan and continue to simmer for another 5 minutes.
