Good news! My husband just got promoted to the Foreign Service equivalent of a 2 star General! So proud of him. Of course I’ve always known he was superior
Jade and I will finally join the officer and gentleman on Saturday in Strasbourg. In the meantime, down the road I go tomorrow to pick Jade up for the weekend.
This week’s bento is pasta, meatballs and chicken drumettes to the left. Salmon and marinated shrimp salad to the right.
Salmon and Marinated Shrimp Salad for Bento
1 lb shrimp, cooked
2-3 sun dried tomatoes, finely minced
2 slices onion, finely minced
2 garlic cloves, finely minced
1/2 tsp dried oregano
Salt
Freshly ground black pepper
1/4-1/3 cup olive oil
1/2 cup smoked salmon, diced
Mixed, crunchy salad greens
Homemade Thousand Island dressing
Toss the shrimp, tomatoes, onion, garlic, oregano, salt, pepper and olive oil together in a bowl. Cover and refrigerate overnight.
Place the marinated shrimp and salmon on top of the greens and serve with the dressing.
