Steamed Ginger Chicken with Zucchini Ribbon Salad

So simple yet so elegant!  Summer time food with a rainy day overtone.  I don’t know what I’m saying.

Anyway, this was good.  Recipe for the ribbon salad is here http://cookinginsens.wordpress.com/2011/12/06/yakitori-duck-breast-with-asian-zucchini-ribbon-salad/.  Nap time!

Steamed Ginger Chicken

4 chicken thighs

Fresh ginger, sliced

Spring onions, sliced

4 tbsp mirin

4 tbsp tamari soy sauce

Put the chicken thighs in a heat proof shallow bowl.  Top with the ginger and spring onion slices.  Mix the mirin and soy sauce together and pour over chicken.  Put the bowl inside a steamer basket and steam for 15 minutes, covered.  Baste with the soy sauce mixture and steam for an additional 10 minutes.

Wine suggestion:  Petit Chablis
