Cherry Cheesecake Miniatures

I used an old Fanny Farmer recipe for these mini cheesecakes that is very good.  http://cookinginsens.wordpress.com/2011/05/15/miniature-strawberry-cheesecakes/ and made a simple cherry sauce for the topping.

We had wanted to make blueberry muffins for my husband’s homecoming but couldn’t find fresh blueberries.   What we did find were gorgeous cherries from either Peru or Chile.

Cherry Sauce

1 lb Bing cherries, pitted

Juice of 1 lemon

3 tbsp sugar

1 tbsp cornstarch

Simmer the cherries, lemon juice and sugar for about 4-5 minutes.   Add the cornstarch and continue to simmer until the sauce has thickened.

Lovely! I love these eetsy-beetsy-teeny-weeny cheesecake goodies! Great for those who are watching their weight at this time of the year, won’t deprive the cravings…(is it too obvious that I have gained a lot of weight already, by all the baking and the cookie sharing…=)
